My 2 year old loves this broccoli soup and asks for it for breakfast!
Creamy Broccoli Soup- no dairy
1 tbsp olive oil, clarified butter or fat of choice
1/2 cup sliced leek or yellow onion
2 1/2 cups vegetable or chicken broth
1 can cannellini beans, rinsed
1 head (1 lb.) broccoli, chopped
1/2 tsp lemon zest and 1 tbsp juice
In a sauce pot heat the oil over medium high heat. Cook the onion/leek until translucent and tender, about 2-3 minutes. Add the broth and beans and bring to a simmer. Add the broccoli and cook until tender, about 5 minutes.
Depending on your blender, work in batches to puree the soup. Return the soup to the pot and add the zest and lemon juice. Season with salt and pepper and heat 2 more minutes over medium. Serve warm or cold.
